Special attention is paid to Japanese music: Izumi plays Japanese pop, disco and house from the 70s and 80s, Japanese jazz, and soundtracks to classic anime. On Fridays and Saturdays guest DJs play at the izakaya, recreating the atmosphere of night time Tokyo.
Born in Nagano, he studied in Tokyo and lived in France for 15 years: "At first I worked everywhere, for the experience. Then, gradually, I became a chef in a Michelin restaurant."
In 2021, already in Russia, Kabayashi-san was once again noted by the inspectors of the world-famous Michelin guide. It is indeed difficult to imagine a better chef for Izumi.
